With so many new cases of children with ADD and ADHD as well as Dementia and Alzheimer's these are facts and studies that are worth our attention.
Most Americans consume 134 pounds of wheat -derived foods each year. Most of these being empty calories. Not only are we eating more grains than our grandparents , we are eating different grains. Due to selective breeding , genetic modification and modern agriculture practices, today's wheat contains 40 times the gluten as grains cultivated 20 years ago. The grains we consume now do not have the same genetic structure they once did. I believe the old food pyramid needs to be flip flopped . Vegetables at the bottom , Meats, fruits and a tiny bit of grain at the top. This is the opposite of what they teach children in public school health class . More and more children are diagnosed ADD. Focus issues etc. The answer is diet!
Even whole grains can be bad , they typically have more fiber to slow the release of sugars but they still are carb loaded. They are packed with gluten and other allergenic proteins. It is better to have a high fat diet than a high carb diet. Gluten is an addictive substance . Researchers have known this since the 1970's. Gluten is actually a complex of proteins , primarily glutenins and gladins. Gladins cause inflammation which are very harmful and set the stage for Alzheimer's and other brain functional diseases.
The good news is brain functions can be improved by largely changing diet and lifestyle. Minimize glycemic foods , especially those from grains.
